Notes From The Distillery :

The Kilchoman PX Sherry Cask 2023 release is our first limited edition to be fully matured in PX casks. Some might consider five years to be a short maturation, but these PX hogsheads give such a rich and sweet character, shorter maturation is the only option to maintain a good balance of flavour. Here, the citrus sweetness and peat smoke of our spirit balance beautifully with the PX character to create a multi-dimensional whisky, rich and sweet with hints of light citrus sweetness and waves of maritime peat smoke,” Anthony Wills, Kilchoman Founder.

 Kilchoman Px Sherry Cask 2023 Tasting Notes:

The combination of Kilchoman’s signature peated, maritime spirit and the rich, sweet influence of the Pedro Ximénez casks creates a complex and balanced dram.

Nose: Expect a blend of sweet sultanas and raisins with a layer of rounded peat smoke. There are also notes of licorice, brown sugar, and a hint of citrus sweetness.

Palate: The palate is rich and malty. Flavours of brown sugar, orange peel, and dark chocolate mingle with waves of sherry sweetness. The smoky, coastal character of Kilchoman is present but balanced by the sweetness.

Finish: The finish is long and satisfying, with lingering notes of chocolate-coated raisins, oak smoke, and a lasting sweetness from the PX sherry.

Kilchoman’s founder, Anthony Wills, has noted that a shorter maturation period in these highly active PX hogsheads was necessary to maintain the balance between the sweet sherry character and the classic Kilchoman spirit. Kilchoman Px Sherry Cask 2023release is a testament to the distillery’s experimental approach and its ability to create a harmonious whisky from two powerful and distinct flavour profiles.
