Description
The Significance
This bottling is a true piece of whisky history. Being distilled in 1991 means it was made just two years before the distillery shut down in 1993, making it one of the final remaining artifacts of the Cambus spirit. The long maturation in a single bourbon cask allowed the character of the grain spirit to soften and develop incredibly complex, sweet, and creamy oak-driven notes.
📝 Tasting Notes
The Cooper’s Choice Cambus 1991 is highly praised for its rich, pastry-like sweetness and thick texture, which often appeals to bourbon drinkers or those looking for a smooth, dessert-style Scotch.
Nose: Rich, biscuity, and deeply aromatic. Initial notes ofbaked goods (like Danish pastries or apple pie), followed byold-fashioned toffee, vanilla custard, and caramelized peaches drizzled with brown sugar.
Palate: Fat and juicy, with a very creamy mouthfeel characteristic of old grain whisky. Dominant flavors includerich toffee, butterscotch, and milk chocolate. This is balanced by fruit notes ofpeaches in syrup andbanana toffee, alongside warm spice (cinnamon and ginger).
Finish: Long, warm, and inviting. It finishes with notes ofmilk chocolate truffles, peach flan, rich vanillin oak, and cinnamon toast, with a final dusting of nutmeg on custard tarts.
Thecask strength of51.5% ABV ensures the flavor intensity is maximized, but its 24 years of age makes it smooth enough to enjoy neat, or with a few drops of water to open up the complex fruit and spice layers.
