Collaborators: Edition No. 2 was a creative collaboration between Bob Dalgarno, Macallan’s then Master Whisky Maker, and the Roca brothers (Joan, Josep, and Jordi) who founded El Celler de Can Roca, a renowned fine-dining restaurant in Girona, Spain, which has twice been named the “Best Restaurant in the World.”

Concept: Each of the four collaborators selected casks that represented their distinct personalities and culinary expertise, contributing to the final blend. This was a unique way to highlight the impact of different wood types and their influence on the whisky’s character.

Cask Composition:

Edition No 2 is a testament to the complexity achievable through careful cask selection. It was crafted from seven different oak cask types sourced from four distinct Spanish bodegas and cooperages. These included both European and American oak. The specific casks selected by each collaborator were:

Bob Dalgarno (Master Whisky Maker): European oak Tevasa casks, contributing intense dried fruit and sherry notes.

Joan Roca (Head Chef): American and European oak Diego Martin casks, adding green wood and toffee flavors.

Josep Roca (Sommelier): European oak Jose Miguel Martin casks, providing notes of allspice and ginger.

Jordi Roca (Pastry Chef): American oak Vasyma butts and puncheons, bringing light vanilla and citrus notes.
