Fortaleza Blanco is widely considered the gold standard for artisanal, additive-free tequila. While many modern brands have moved toward industrial efficiency, Fortaleza (known in Mexico as Los Abuelos) still uses methods from the late 1800s.

The Artisanal Profile

Fortaleza’s flavor is defined by its “old-world” production:

The Tahona: The agave is crushed by a 2-ton volcanic stone wheel (tahona), which preserves more of the agave’s natural fibers and oils than modern rollers.

Open-Air Fermentation: Fermented in open wooden vats, allowing local wild yeasts to influence the flavor.

Small Copper Pots: Distilled in tiny copper stills that emphasize texture and “funky” vegetal notes.

Tasting Notes

Unlike many mass-market tequilas that taste purely of vanilla or pepper, Fortaleza Blanco has a very distinct savory edge.

Nose: Vibrant cooked agave, citrus (lemon and lime peel), and a very famous olive brine or “green olive” aroma. You’ll also pick up earthy, wet-stone (petrichor) notes.

Palate: Creamy and oily mouthfeel. It tastes of sweet roasted agave, basil, butter, and a hint of black pepper.

Finish: Long and clean, with a lingering mineral saltiness and a touch of anise.
