Hearach Chateau Biac 2025 First Release is a product of a friendship and partnership between the Isle of Harris Distillery and the Asseily family, the owners of Château Biac, a small, historic vineyard in Bordeaux, France. The collaboration was initiated after a mutual friend introduced the two parties, and the Asseilys, who are whisky lovers themselves, suggested maturing the Isle of Harris spirit in their French oak casks.

What makes Hearach Chateau Biac 2025 First Release so special ?

Maturation and Cask Type :

So special about this whisky is its full maturation in ex-sweet white wine casks.

The casks previously held “Secret de Château Biac,” a highly-regarded sweet white wine (aliquoreux wine). These casks, which are unique to this collaboration, have never been used to mature Scotch whisky before. The spirit was filled into these casks in 2018 and 2019 and was matured entirely on the Isle of Harris before being bottled in 2025.

Filtration: It is non-chill filtered and has no artificial colouring.

Tasting Notes:

The unique cask maturation results in a complex and intriguing flavour profile that blends the island’s character with the influence of the sweet French wine. Official and reviewer-driven notes describe it as:

Nose: Gentle peat smoke, sweet wine, and a mix of ripe fruits like pears, dark plums, and cherries. There are also floral notes of spring flowers and jasmine.

Palate: A vibrant and layered palate with flavours of tropical fruit, sweet lemon, and a touch of lime. This is balanced by mixed spices, vanilla, and a note of new leather.

Finish: The finish is long and satisfying, with lingering notes of ripe fruit and a subtle, but persistent, wisp of peat smoke.
