Tasting Notes
Because it was bottled by High Spirits at 46% (rather than Macallan’s standard 40% or 43% distillery bottlings of the era), the distillate has significantly more room to breathe. The 1991 vintage from High Spirits is known for showing a different, more naked side of Macallan.
The Nose: Very clean and elegant. It steps away from the heavy, sticky Oloroso sherry bombs that Macallan is universally known for, leaning instead into refined orchard fruits. Expect bright aromas of crisp yellow apples, honeyed pears, soft vanilla fudge, and a touch of fresh grass and toasted oak.
The Palate: Medium-bodied and surprisingly vibrant. It hits the tongue with a mix of creamy honey, vanilla custard, and a soft, peppery malt spice. It features subtle undertones of lemon zest, almond paste, and a very light, delicate wood influence.
The Finish: Clean, warming, and medium in length. It leaves behind notes of sweet malt, subtle baking spices (like nutmeg), and a dry, crisp apple peel note.
