Description

Kilchoman Cognac Cask Matured — 2026 Edition

This release is the latest chapter in Kilchoman’s “Not A Finish” series — a name that signals exactly what makes these bottlings different from most experimental cask releases on the market. Rather than spending a whisky’s final few months in an unusual cask for a flavor accent, Kilchoman commits the spirit to the cask type for its entire maturation journey. In this case, that means the whisky spent its whole life, from new-make to bottling, resting in Cognac wood rather than the more typical bourbon or sherry casks.

The whisky was distilled back in 2019 and bottled seven years later in 2026, at cask strength-adjacent 50% ABV. The recipe behind it is a marriage of 33 first-fill ex-Cognac barriques, all vatted together to produce the final liquid — first-fill meaning these casks had only previously held Cognac before Kilchoman filled them, so they’re at their most flavor-active and should impart a stronger, more direct Cognac character than a refill cask would.

Because Kilchoman is known first and foremost for its heavily peated Islay spirit, the appeal of this release lies in the interplay between two very different influences: the smoky, maritime, farmhouse character the distillery is built on, and the sweeter, fruitier, spice-driven notes that French oak Cognac casks typically contribute — things like dried orchard fruit, honeyed sweetness, baking spice, and a rounder, softer mouthfeel than an ex-bourbon cask usually gives. Full-term maturation in this wood, rather than just a finish, gives that Cognac influence far more time to properly integrate with the peat smoke, rather than sitting as a light veneer over the spirit.

At 70cl and 50% ABV, it’s bottled at a robust, likely non-chill-filtered strength typical of Kilchoman’s limited series, meant to preserve the whisky’s full texture and let both the peat and the cask character come through clearly. As a limited “Not A Finish” release, it’s aimed at collectors and Islay enthusiasts interested in seeing how far Kilchoman’s signature spirit can be reshaped by full-term maturation in a genuinely different type of oak.

Tasting Notes:

Nose

The whisky opens with bright, ripe orchard fruit — think fresh pear and crisp apple — rather than anything heavy or dark. Underneath that fruit sits Kilchoman’s trademark coastal peat, though here it reads more as a gentle smoky backdrop than a dominant force. A layer of honey sweetness rounds things out, joined by lightly toasted nuts and a warm dusting of baking spice, giving the aroma a comforting, freshly-baked quality alongside its fruitiness.

Palate

The texture is rich and buttery, coating the palate before the flavors unfold in waves. Baked stone fruit — the kind of soft, caramelized sweetness you get from fruit cooked rather than fresh — leads the way, followed by honeycomb and a spicier kick of crystallised ginger. A subtle salty edge runs beneath the sweetness, likely a nod to Kilchoman’s coastal distillery location, keeping the whisky from tipping into being cloying and instead giving it a savory-sweet balance.

Finish

The finish stretches out long, with the peat smoke reasserting itself and taking on a drying quality as it lingers. Rather than fading quickly, that smokiness sits alongside echoes of the orchard fruit from the nose and a final sweetness from the oak, so the whisky closes on a note that’s smoky and dry but never harsh.

Overall character

Positioned against the series’ previous release — the Maury Cask Matured, which would have leaned into darker, richer, wine-cask-driven flavors from that fortified French wine — this Cognac cask edition reads as the lighter, brighter counterpart. It trades deep, jammy richness for orchard fruit, honeyed sweetness, and baking spice, while still keeping Kilchoman’s coastal peat character fully intact as a backbone. It’s a whisky built around contrast: delicate fruit and honey up against smoke and salt, rather than one flavor overwhelming the other.
