Released as part of the distillery’s highly acclaimed“Masters of Wood” Series, theGlenAllachie 19 Year Old Ex Solera Sherry Cask Matured is an absolute unicorn for fans of heavy, sherry-matured single malts.

What makes this release legendary is the sheer scarcity of the wood used. In the whisky industry, most “sherry casks” are bespoke barrels seasoned with sherry for just 12 to 18 months before being shipped to Scotland. For this special release, Master Distiller Billy Walker managed to source genuinevintage casks that had been actively used inside a traditional Spanish solera system for over 55 years to age fine Pedro Ximénez (PX) and Oloroso sherry.

Because solera casks are essentially the lifeblood of a bodega and are almost never removed from the system, getting a hold of them is a massive coup.

GlenAllachie 19 Year Old Ex Solera

A luxurious, heavily sherried GlenAllachie with deep plum, treacle, mocha, honeyed richness, and warming spice.

The Maturation Process

Initial Aging: The single malt spent its formative years resting in standard American oak ex-bourbon barrels, soaking up notes of vanilla, crisp pear, sweet honey, and coconut.

The Secondary Maturation: The whisky was then transferred into the ancient, 55+ year old ex-solera casks.

- ThePX casks injected massive layers of gooey, dark fruit cake sweetness and sticky molasses.
- The Oloroso casks countered that sweetness with deep, savory structural elements like roasted walnuts, old polished oak, and rich baking spices.

Tasting Notes

The five-and-a-half decades of sherry interaction in the wood created slow, parallel oxidation, resulting in a remarkably viscous, heavy, and velvety texture.

Nose: Brandied plum, mocha, honeycomb, caramel, molasses, cocoa.
Palate: Plum syrup, treacle, heather honey, black cherry, mocha, brandied orchard fruit, cinnamon, ginger.
Finish: Long, rich, gently spiced, with cocoa and dark fruit.
