Distilled from molasses and crafted using a blend of pot and column stills, Covenant began its life much like its Exceptional Cask siblings, maturing quietly in ex-bourbon casks. But at the ten-year mark, something unusual happened: the spirit was vatted and reduced in strength, then left to rest for a further eight years of slow, patient ageing. The result is a rum of exceptional depth and structure — one that speaks to Foursquare’s willingness to let time, rather than convention, dictate when a rum is truly ready.
